These can be made a full day before the party.

I needed a make-ahead recipe for a picnic party this past weekend, so I took inspiration from the classic tea sandwich and went from there. The bread was a long pullman loaf, which I asked the bakery to slice lengthwise so I could make a bunch of sandwiches at once (think foot-long hero). There were three variations, all of which held up perfectly overnight and traveled well. See more after the jump.I started with the tried-and-true smoked salmon/cream cheese/cucumber filling. I laid thin layers of each on the bread, and sprinkled over some capers for zing. Then I made a version with prosciutto, fresh basil, and thinly sliced fontina. The third one had ricotta, mortadella, and spicy salami, which turned out to be the crowd favorite.

Key steps: spreading the insides of the bread (top and bottom) edge to edge with room temperature butter; this acts as a water-proof barrier, so the bread doesn’t get soggy. For the version with ricotta, I used a very dense, fresh ricotta. If using a supermarket brand, you might want to let it sit in a strainer set over a bowl in the refrigerator for a few hours to drain off excess water. I assembled the sandwiches on a sheet of wax paper, then cut them. I folded the wax paper around the sandwich, then wrapped them in plastic wrap before putting them in the fridge. Along with some cantaloupe wedges and fresh grapes, these made for a super-portable, easy to eat, and delicious picnic lunch. I just wish I had made more!
