stuffed pepper 400x300 stuffed peppersI had several red bell peppers to use up and did a quick look back through my Everyday Foods to find a stuffed-pepper recipe. I found a stuffed-poblano recipe in the April 2008 issue and decided to give it a whirl, subbing in my red peppers. (I also have been cooking more vegetarian meals lately and the recipe fit the bill in that respect, too.) I added cubed zucchini to the filling mixture and used cotija cheese in place the pepper Jack. The tomato base is basically the same recipe I use to make homemade salsa. I made it the night before and then stuck it in the oven the next evening. Avocado slices were a nice complement to the dish. What’s your favorite stuffed pepper recipe?
